A Beau-Tea-ful Christmas Meal with Dilmah Tea

Christmas is around the corner and 'tis the season to be jolly and celebrate with your loved ones. Plan your Christmas meal with Dilmah Tea to add just the right amount of festive cheer. Here's a carefully curated beau-tea-ful three-course Christmas meal infused with the warmth and joy of tea.

The appetiser features a Dilmah Ginger Tea Marinated Red Quinoa Salad that combines quinoa infused with ginger tea, fresh vegetables like carrot, celery, and cucumber, along with pomelo and tomato. The salad is served with asparagus tips, watercress, and romaine lettuce, dressed with a special chamomile tea vinaigrette and ginger tea oil.

The main course consists of Duck Confit with Blueberry and Clove Gel. Duck legs are cured in salt and herbs, then vacuum-sealed and cooked slowly at low temperature. They are plated with a blueberry and clove gel infusion made from frozen blueberries, white chicken stock, and a natural blueberry and clove tea blend.

For dessert, the meal concludes with Pavlova topped with vanilla cream, Dilmah Vivid Natural Lemon Verbena Curd, and Dilmah Vivid Pure Peppermint Caviar. The pavlova base is made with egg whites, sugar, cornflour, and macadamia nuts, creating an elegant finishing course.

To end the meal, guests can enjoy a warm cup of Cinnamon Curry Darjeeling Tea, made by brewing Dilmah Darjeeling tea and combining it with apple juice, water, cinnamon sticks, and curry leaves — the perfect conclusion to the festive dining experience.
